Why is it so hard to get information and records for family that originated in these places? I’ve searched high and low and have had so many roadblocks come up. Ancestry.com doesn’t even list Spain or Cuba in their countries you can search from. I’ve asked them about and it and was told they can only offer records that the government allows them. What harm could genealogy records cause that they aren’t available? Does anyone know where I can find help on researching our roots from these countries?
I stumbled across this blog sometime back and it has useful information: http://hispanicgenealogy.blogspot.com/ The LDS at their Family Search Labs website have posted a lot of Latin American genealogical records: http://labs.familysearch.org/
Disclaimer, I haven’t done any Hispanic genealogy myself so I can’t say how useful these might be. My speciality is Jewish genealogy.

I did a test search for Juan Garcia born or christened 1878 Spain and it turned up over 200 results. Note, though, that the initial search turns up only the first 25 or so results, and you have to click on the source in the upper right hand corner to see the rest.
The same search in Cuba turned up about 40 results.
